Every bar we make leaves something behind. The edges trimmed from the mould, the pieces that don’t make the cut, the remnants scraped from the tempering bowl at the end of a batch. In most chocolate factories this goes in the bin. We scoop it up.
Lil’ Bites are what happens when you run a zero waste operation & refuse to throw anything away.
Every batch is different, a random, unrepeatable mix of whatever single origins we’ve been working with that week, blended together into small cube-sized bites.
One batch might lean dark & fruity. The next earthy & complex. You won’t know until you open the bag.
