The Cocoa Project by EastLand, are Jordan\u2019s first bean-to-bar & micro-batch chocolate makers.<\/p>

We opened our workshop as part of continuing a family tradition of making of chocolate since 1959. Although that was a very large scale, industrial operation working with tonnes of chocolate a day, our humble capacity is working in slightly smaller 8kg batches. We strive to make the best chocolate rather than the most chocolate.<\/p>

We decided to bring chocolate back into our lives in 2017, but this time as micro-batch, bean-to-bar chocolate. Living in Toronto at the time, we started experimenting in our apartment with roasting different beans, tasting the different flavors of each origin & ending up in the emergency room with a nearly chopped off finger working our first batch!<\/p>

Our test subjects were our friends & families, who we bombarded with endless supplies of good (& not so good) bars of chocolate.<\/p>

At our current workspace in the heart of one of Amman\u2019s oldest neighborhoods, we roast, crack, sort, winnow, grind, & temper small batches of beans. Each bar is then molded & packaged by hand.<\/p>

We use no additives, emulsifiers or artificial flavoring.<\/p>

We only source high quality, ethically sourced, direct trade & where possible organic cacao beans that ensure better prices for farmers, better cacao beans for us & ultimately better chocolate for you.<\/p>

Through our range of products, we use the entire cocoa bean & are aiming to be a zero waste manufacturing operation.<\/p>

Bean-to-bar chocolate making is a process where chocolate makers control every step of the chocolate-making process, from sourcing cocoa beans to crafting the final chocolate bars.<\/p>

We emphasizes transparency, quality, & craftsmanship. By controlling the entire process, we can create unique & distinctive chocolate bars with complex flavors that reflect the characteristics of the cocoa beans used.<\/p>
